Oscietra caviar is known for its complex and somewhat nutty flavor. Prepared according to a centuries-old Astrakhan salting recipe, Oscietra sturgeon takes up to 15 years to harvest. Their velvety eggs range from shades of amber to the darkest mahogany, hence their nickname as the “gold standard” of caviar. They measure between 2.5 and 3mm in diameter.
