Porcini mushrooms “Testa nera” variety in olive oil.
The preserve is prepared with a selection of smaller mushrooms, wonderful to look at and tempting to the palate. The porcini mushroom variety “testa nera” (boletus pinicola) is more unique, firmer, crunchier and suitable for processing in oil. For more than 20 years, Federico Santamaria has been dedicated to the artisanal production of canned mushrooms. Using traditional production methods combined with advanced cooking techniques that enhance the flavor and fragrance while respecting its naturalness and benefits.
According to his recipe, the mushrooms are first cleaned and then blanched with water, wine vinegar, white wine, fresh vegetables, aromatic herbs and spices. Once cooled, they are preserved in EVOO to enhance the quality and goodness of the product. Mushrooms in oil are perfect as an appetizer or as an accompaniment to main dishes, especially meats, cold cuts, salads and vegetables, or to prepare a special bruschetta. However, they cannot be used as an ingredient for pasta or risottos since vinegar is used in the recipe.
