Pasta all’uovo tagliatelle.
Durum wheat semolina and fresh pasteurized eggs category A (35%).
The dough is always made at low temperatures according to a procedure that allows each semolina grain to be enriched with water, achieving a perfectly homogeneous dough. Perfect sheets are made directly from the dough crumbs and worked constantly at low temperatures, stretching it “cold”.
